Fats, Oils, & Grease (FOG) Pre-treatment

Over time, fats, oils, grease and wax (known by the acronym FOG) leads to blockages that result in overflows into our homes or onto our streets, down storm drains, and into local waterways, all posing a serious risk to public health.

Commercial Food Service Pretreatment

All food service establishments, including coffee shops, are required to pretreat their wastewater for fats, oils and grease (FOG). Pretreatment devices can be smaller grease traps located indoors, or larger grease interceptors located outside. These devices must be connected to collect all wastewater from 3-compartment sinks, floor sinks, floor drains, mop sinks, and prep sinks.

Owners or occupants also must properly maintain grease, oil and sand traps at all times, according to Section 94-553 (F) of the Sewers and Sewage Disposal Ordinance for the Lafayette City-Parish Consolidated Government.

Grease traps must be maintained on a regular basis – minimum every 90 days as per the Sewer Use Ordinance paying special attention to small under the sink type traps which may need to be maintained more often, minimum once per week.
